Syoukon “Hane” HAP40 Ladder Pattern Damascus Series

This series is OEM by a knife factory in Seki, Gifu; a city well-known for its automated knife production. The body of the knife features a unique ladder pattern stainless steel Damascus cladding; the edge has been given a convex grind, giving it good toughness as well as better food release.

HAP40, an ultra-hard steel which can clocks in at around 66 HRC after heat treatment, is used as the steel core. While not a stainless steel, it is still relatively resistant to corrosion.

With this high-performance steel and decent grind, you can mow through tons and tons of food ingredients before having to re-sharpen it again, which makes this a good choice for chefs working in professional, high workload kitchen or knife enthusiast who would like to add a HAP40 knife into their collection.
