An often neglected knife smith, Yoshimi Katou,

Yoshimi Katou is the son-in-law of Hiro Kato, who took up an apprenticeship under his father-in-law at Kanehiro Hamono to learn knife forging. Yu Kurosaki, the now world-renowned knife smith learns the art of forging from the same master together with Yoshimi Katou. He later took over the workshop in 2017 and renamed it to Katou Hamono.

Yoshimi Katou strives to improve his skills and insists on handforging. He produces good quality knives and each of them has an extremely sharp tapering. His SG-2 V-shaped Damascus series is one of the sharpest kitchen knives that I’ve seen. A knife smith of such qualities deserves more recognition.
