The Honesuki is a hard, non-flexible Japanese boning knife characterized by its slightly curved belly and a sharp, tapered tip. This design allows users to easily navigate through chicken or fish bones, joints, and cartilage, making it ideal for preparing poultry or small fish.
Hand forged by Yoshimi Kato, utilise a SG2 powder steel steel core, reaching to a hardness of around 63 HRC after heat treatment. It possess excellent corrosion resistance and edge retention.

Yoshimi Katou is an often-overlooked knifesmith who has made significant contributions to the art of blade forging. As the son-in-law of Hiro Katou, he began his apprenticeship at "Kanehiro Hamono," learning the craft from his father-in-law. Notably, he trained alongside Yu Kurosaki, who is now a world-renowned knife smith and eventually took over the workshop in 2017, renaming it "Katou Hamono."
Dedicated to honing his skills, Yoshimi Katou emphasizes the importance of hand-forging in his work. He produces high-quality knives, each featuring an exceptionally sharp taper.
