Expertly forged and sharpened by Takahiro Nihei. With outstanding heat treatment and precise grinding, this knife is a versatile addition to any kitchen.

The blade features a simple Nashiji (Pear Skin) surface, while the edge is finished with a Kasumi and Mirror Polish. The thick spine embodies the signature knife style of Sanjo.

Hitachi SLD is a high-hardness tool steel that can reach a hardness of 65 HRC after heat treatment. SLD is more corrosion resistant than traditional carbon steel but it is still recommended to rinse the blade asap after handling acidic food ingredients.

The knife comes with a Magnolia sheath, featuring a burnt-on Konosuke logo and an exquisite pin.
