Description

This is a blade profile I designed back in 2018. Since its debut, it has earned consistent praise from professional chefs and experienced users alike. Now, it has evolved into its third generation. From the very beginning, the goal was simple yet ambitious. I wanted to create a gyuto with the precision and razor sharp feel of a yanagiba.

The blade follows traditional Japanese craftsmanship with a single bevel construction and uraoshi. This structure significantly reduces drag during cutting and helps food release more cleanly from the blade. The tip features a bold Kandokoro Kiritsuke style with a more pronounced edge curvature, making draw cuts smoother, more precise, and easier to control.

The latest version is crafted by the Xinguo team using monosteel Swedish RWL34 powder steel. This upgrade delivers exceptional edge retention, excellent toughness, and impressive corrosion resistance. Compared to the previous two generations in Ginsan with honkasumi construction, this is without question a major step forward in both performance and durability.

The finishing has also reached a new level. A near mirror polish enhances the overall presence of the blade, while the bevel and spine are hand finished with a refined brushed texture. The choil and spine are carefully rounded for a smooth, comfortable grip, showcasing the Xinguo team’s relentless attention to detail and pursuit of grinding excellence.
