By bringing together premium Ginsan steel from Japan and well‑managed production in China, it achieves an impressive balance of performance, fit and finish, and overall value.
Crafted in traditional Warikomi construction, the blade features a Ginsan steel core clad in stainless steel. Known for its fine grain structure, Ginsan takes a very keen, clean edge while remaining easy to sharpen. It offers excellent corrosion resistance and reliable edge retention, with straightforward day‑to‑day maintenance.
With a blade height of 95 mm, it provides generous knuckle clearance and a strong presence on the board. It handles large volumes of vegetables and sliced meats with ease, while the wide blade also makes it convenient to gather and transfer ingredients. The balance feels stable and confident in hand, allowing for precise control during detailed slicing work.
