In the Chromax series, that refined geometry meets a steel selected for real world performance. Positioned between carbon and stainless, Chromax delivers strong edge formation, crisp bite, and improved stain resistance compare with carbon steel. Hardened to approximately 64 HRC, it balances sharpness and durability for consistent daily use.
Shibata focuses on “Kireaji (切味)”, the sensation of cutting. It is not just about sharpness, but smooth entry, clean separation, and minimal drag. The balanced grind and subtle surface texture support food release and maintain rhythm during extended prep.
The profile runs flatter than a typical petty, encouraging efficient push cuts while retaining versatility. Stability through the heel and precision at the assertive tip provide confident control. Defined by true laser geometry, the blade is extremely thin behind the edge, reducing resistance and allowing dense ingredients to separate cleanly with less effort and greater control.
