Hatsukokoro (初心刃物) is a 2019‑founded Hyogo brand that collaborates with craftsmen nationwide to offer a huge range of Japanese kitchen knives, known for strong availability, diverse steels, and high performance at competitive prices worldwide.

This honesuki uses HAP40 high‑speed powder steel, a high-vanadium, wear resistance alloy that can be hardened to around 65 HRC, giving crazy outstanding edge retention with one major catch: it require diamond stones to sharpen.

Honesuki is a compact, rigid Japanese boning knife designed specifically for breaking down poultry, with a narrow tip and strong heel that make it ideal for working along joints, cutting through small bones and trimming meat cleanly.
