Description

The Hatsukokoro Kaijin (Sea God) is a clean, understated line. With its polished edge and sandblasted bevel, it keeps the look simple and free of decorative elements. It’s not designed to stand out visually — it’s built to perform. And in terms of value for performance, it’s hard to beat.

At its core is Blue #2 carbon steel from Hitachi, known for taking a sharp, aggressive edge with excellent feedback on the board. The blade is ground very thin behind the edge, then transitions into a subtle convex shape. This geometry allows for smooth penetration while helping reduce drag and sticking.

Despite the carbon core, the stainless cladding keeps maintenance reasonable, making it a practical step into carbon steel without the full commitment of a fully reactive blade.

I’d recommend the Kaijin to anyone comfortable with entry-level stainless knives like VG10 and looking to move into carbon steel. It delivers a noticeable upgrade in cutting performance while keeping cost and upkeep manageable.
