Hand-forged in Sanjo City by the talented bladesmith Shunsuke Manaka, each blade is ground and finished by the highly skilled Xinguo team. This rare collaboration between Japanese and Chinese craftsmen, made possible by us, not only improves production efficiency but significantly elevates overall performance, cutting feel, and refinement.
It features an ATS-34 stainless steel core, hand forge-welded in Sanmai-Uchi construction. It offers excellent edge retention, strong corrosion resistance, and a clean, easy sharpening response, making it especially well suited to the demands of a busy professional kitchen. The generous blade height provides ample knuckle clearance, ensuring comfort and control even during extended prep.
The surface is finished with Manaka’s latest Tsuchime pattern, while the Xinguo team applies a Mirror Kasumi finish to create a refined contrast between mirror polish and a soft, misted texture. The spine and choil are chamfered and polished for a smooth, comfortable feel.
Rather than using extreme thinness to create a crazy level of sharpness, we prioritize stability and practicality. The convex geometry delivers a solid, dependable cutting feel that performs confidently across a wide range of techniques.
