Description
This is an authentic Chinese slicing cleaver, hand‑forged in Chongqing, China. Designed by K&S founder James Zhang, the project set out to create the ideal Chinese cleaver using premium Japanese steel and uncompromising craftsmanship.

The core steel is Blue #2, sourced from Sanyoriki(山陽利器), renowned for producing some of the finest cutlery steels in the world. It delivers exceptional sharpness, outstanding edge retention, and impressive toughness. The blade features a stainless steel cladding, significantly reducing the maintenance concerns typically associated with high‑carbon kitchen knives, making it far more practical for everyday use.

Weighing just 300g, it is one of the lightest Chinese cleavers available on the market. The edge is ground thin and finished razor sharp, delivering exceptional cutting performance. At the same time, it maintains a robust 3.2mm spine, ensuring strength and stability to handle demanding kitchen tasks with confidence. From the very first use, it offers a truly outstanding cutting experience.

Please note that this is a Chinese Slicer (片刀), designed specifically for slicing and general ingredient preparation. It is not intended for chopping bones, cutting hard materials, or processing partially frozen foods.
