Developed by Australian knife retailer Knives and Stones, this Chinese slicer draws on the brand’s extensive experience with Japanese steels and Chinese kitchen knives. Combining premium Japanese Ginsan steel with carefully managed production in China, it delivers an impressive balance of cutting performance, fit and finish, and overall value.
This latest version pairs a Ginsan stainless-steel core with stainless Damascus cladding—a combination rarely seen on a traditionally styled Chinese cleaver. Known for its fine grain structure, Ginsan takes a very keen, clean edge while remaining straightforward to sharpen. Its excellent corrosion resistance and dependable edge retention also make it a practical choice for everyday kitchen use.
The blade is finished with an etched Damascus pattern that brings out the layered cladding and gives the knife a distinctive, refined appearance. Its carefully executed edge geometry provides excellent sharpness and smooth, efficient cutting performance straight out of the box. With a blade height of 95 mm, the knife offers generous knuckle clearance and a substantial presence on the board. It is particularly well suited to preparing larger quantities of vegetables and sliced meats, while the broad blade makes it easy to scoop up and transfer ingredients after cutting.
The handle features an in-house K&S design, crafted from stabilised blue-dyed flamed maple. Its shaped profile provides a comfortable, secure grip, while the precise overall fit and finish give the knife a refined and well-built feel.
Please note that this is a Chinese slicer, designed specifically for slicing and general ingredient preparation. It is not intended for chopping bones, cutting hard materials, or processing partially frozen foods.
