Matsubara Ginsan Nashiji Series

This gyuto is hand forged with clad ginsan steel, a commonly used, stainless high-carbon steel. It offers decent edge retention and corrosion resistance, making it ideal for all kinds of users.

The nashiji finish is kept on the body for a raw, rustic look. What makes this blade stand out, quite literally, is its unusual blade height of 56mm+, making it ideal for large knuckle users and having a longer-lasting knife.

Matsubara Hamono (Tanaka-Kama Industry), based in Omura City, Nagasaki Prefecture, Japan, has been operating for over 90 years. Led by the 4th generation knife smith Katsuto Tanaka, and his son. Their knives are crafted using traditional hand-forging and grinding techniques, all at competitive prices. These features have made them well-regarded both in Japan and abroad.
