This blade is hand forged with Shirogami 1 steel, a high carbon steel that is well known for its composition's purity and sharpenability. It features an excellent hardness of 64 HRC and edge retention after careful heat treatment. The stainless clad helps minimise the effort requires to maintain the steel.
Kurouchi is retained on the knife for the simple, rustic look. The spine has a distal taper and the edge itself also features a decent grind too. This knife is a good balance between weight and sharpness.
Matsubara Hamono (Tanaka-Kama Industry), based in Omura City, Nagasaki Prefecture, Japan, has been operating for over 90 years. Led by the 4th generation knife smith Katsuto Tanaka, and his son. Their knives are crafted using traditional hand-forging and grinding techniques, all at competitive prices. These features have made them well-regarded both in Japan and abroad.
