Nigara SG2 Tsuchime Migaki series

Nigara Hamono’s SG2 Migaki series pairs modern powdered stainless steel with a bold hammered aesthetic. Built in san‑mai construction, the SG2 core at around 62–63 HRC delivers long‑lasting sharpness, strong wear resistance, and easy daily maintenance. Stainless cladding with a tsuchime hammered pattern over a matte migaki finish helps reduce food sticking while giving the blade a raw yet refined look. Thin behind the edge with a 50/50 double‑bevel grind, these knives excel at precise push‑cutting and all‑round prep, from meat and fish to dense vegetables.

This is also said to be former head sharpener Maruyama‑san’s favourite Nigara series, as he shared during our shop’s 10th‑anniversary knife show.
